Johnathan's Ribs
Ingredients
- 1/4 cup sugar
- 1/4 cup non-iodized table salt
- 1/4 cup brown sugar
- 4 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper, freshly ground
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Directions
- Prep the ribs by removing the silver skin and rinsing them, then patting dry. Mix the rub and apply to both sides of the ribs.
- I smoked my ribs in a horizontal smoker at around 300 degrees for 3½ hours using char-wood as fuel and hickory chunks for smoke.
- At the two hour mark I rotated the racks front to back to ensure even cooking and also added a chimney of char-wood and a few pieces of hickory for smoke.
- At the 3 hour mark I applied Tays Sweet 'N Smokey sauce and re-applied sauce every 15 minutes for the last half hour.
- At 3½ hours the ribs had just a little chew. If they had gone one more hour the ribs would have fallen off the bone.
